​​The Gouda region has been the place where farmers have made cheese from cow’s milk for centuries. Grandfather Cor van Riet started maturing cheese in 1934 in a building located on the cheese market of Woerden, a city near Gouda. Hundreds of farmers brought their young cheese to this market every week.

The ripening of cheese is a craft. And depending on your clientele, you control by taste or by weight… For craftsman Coen, taste is the most important. This means that weight is secondary. The ripening by taste is controlled by the wood on which the cheese lies, the temperature and the humidity. In addition, the cheeses are turned and polished several times a week. Cheese ripener Coen is the 3rd generation craftsman who has mastered this craft.
