A classic! You can dip vegetables, fruit and/or bread in a pot with melted cheese. The perfect, easy but delicious meal for a casual gathering with family or friends.
Serves 4
Ingredients:
- 14 ounces (400 grams) young (or mild) Gouda
- 14 ounces (400 grams) aged Gouda
- 1½ cups (350 ml) white wine (preferably from the Alsace region)
- ⅓ cup (100 ml) heavy cream
- 3 tablespoons (50 ml) milk
- A generous pinch of white pepper
- 1 tablespoon cornstarch or potato starch
Special equipment:
- Fondue pot or a regular sauce pan
Instructions:
- Prepare the cheese: Grate both the young and aged cheeses.
- Combine ingredients: In a sauce pan, combine the grated cheeses with the white wine, heavy cream, and milk.
- Heat the mixture: Place the saucepan over medium heat. Stir continuously with a whisk to prevent the cheese from sticking to the bottom.
- Thicken the fondue: Once the cheese has melted, if the mixture is too thin, you can thicken it by adding a bit more cheese or by mixing in the cornstarch.
- Simmer: Allow the fondue to simmer gently, ensuring the wine’s alcohol content evaporates.
- Strain (optional): For a smoother consistency, pour the cheese mixture through a sieve into a bowl to remove any lumps.
- Transfer to fondue pot: Pour the smooth, melted cheese into your fondue pot and place it over a heat source to keep it warm.
Serving Suggestions:
Traditionally, cheese fondue is enjoyed with a variety of dippables. Here are some suggestions:
- Bread: Chunks of crusty bread, such as French baguette or sourdough.
- Vegetables: Lightly steamed or raw vegetables like broccoli florets, cauliflower, cherry tomatoes, or carrots.
- Fruits: Slices of apple or grapes can provide a sweet contrast to the savory cheese.
- Cured Meats: Thin slices of salami or ham for added flavor.
Tips:
- Wine Choice: A dry white wine from the Alsace region is recommended, but any dry white wine like Sauvignon Blanc or Pinot Grigio will work.
- Consistency: If the fondue is too thick, add a little more warm milk or wine to reach your desired consistency. If it’s too thin, add more grated cheese or a bit more cornstarch dissolved in a small amount of cold wine or water.
Enjoy this warm and comforting dish, perfect for gatherings or a cozy night in.
