This Brussels sprout mash with cheese is a classic Dutch winter dish, combining creamy mashed potatoes with tender Brussels sprouts and melted Gouda. It’s simple, hearty, and full of comforting flavors. Traditionally served with smoked sausage or crispy bacon, it’s a must-try for anyone wanting a taste of Dutch home cooking.
Serves 4
Ingredients:
- 2.2 lbs (1 kg) starchy potatoes (such as Russet)
- 1 lb (500 g) Brussels sprouts
- ¾ cup (200 ml) milk
- 3.5 oz (100 g) shredded Gouda cheese
- 1 tablespoon mustard (Dijon or yellow)
- Salt and pepper to taste
Instructions:
- Cook the potatoes and Brussels sprouts:
- Peel the potatoes and cut them into large chunks.
- Trim the stems off the Brussels sprouts and remove any loose outer leaves.
- Bring a large pot of salted water to a boil and cook the potatoes for about 20 minutes.
- Add the Brussels sprouts to the same pot after 10 minutes, so everything finishes cooking together.
- Drain and mash
- Drain the potatoes and Brussels sprouts, keeping about ½ cup of the cooking water.
- Mash them together using a potato masher for a chunky texture.
- Add milk and cheese
- Warm the milk slightly and mix it into the mash.
- Stir in the shredded cheese and mustard until the cheese is melted and everything is well combined.
- If the mash is too thick, add a bit of the reserved cooking water to adjust the consistency.
- Season and serve
- Add salt and pepper to taste.
- Serve hot, traditionally with smoked sausage (rookworst) or crispy bacon for extra flavor.
Tip: If you want a vegetarian version, skip the sausage or replace it with plant-based alternatives. This dish is a Dutch winter classic, perfect for a hearty meal.
